Ultimate Potato Wedges


Here at uni, I live with two friends and I’m the only one of us three that likes potatoes. I threw this together one  evening when I was looking for something to eat and was pleasantly surprised by how tasty it turned out. Unfortunately, I had put in too much chilli powder the first time I made it so I had to douse them in ketchup and mayo in order to be able to eat them. No fear, I adjusted the amount of chilli in the recipe below.


  • Potatoes (enough to feed as many people as you need to feed)
  • 2 teaspoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chilli powder/red pepper flakes
  • 1/2 teaspoon basil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon parsley
  • 1/4 teaspoon thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt

I used the above measurements to make about 7 baby yukon potatoes (two servings) so adjust accordingly.


Preheat oven to 400° and line a baking sheet/dish with foil. Give your potatoes a good scrubbing and cut them into wedges. In a large bowl, add the oil and potatoes. Toss to coat them well. Add all spices and toss again to coat evenly. Spread the potatoes in a single layer on an oven sheet. Bake for 20-25 minutes, turning half way through. That was easy!
